1. Preheat oven to 325 degrees
2. Pat meat dry and season well on all sides. Heat oil in dutch oven and brown roast on all sides. Transfer meat to a plate and add mushrooms. Cook until browned and releasing liquids, about 5min.
3. Add onions and broth. Nestle roast in and add beef broth. Bring to a simmer, cover and transfer to oven for 2 1/2 hours. Remove lid and carefully flip roast. Cook for another 30min.
4. Remove roast. Loosely cover with foil. Remove a cup and a half of liquid and veggies. Puree until smooth and mix back in with remaining veggies.
