4-5 lbsBeef Bottom Round Roast; Boneless
4 cupsBeef Broth
1 lbCremini Mushrooms; cleaned and quartered
2 yellow mushrooms; sliced
2 TbsOlive Oil

Sunday Pot Roast with Mushroom Gravy Preparation

1. Preheat oven to 325 degrees

2. Pat meat dry and season well on all sides. Heat oil in dutch oven and brown roast on all sides. Transfer meat to a plate and add mushrooms. Cook until browned and releasing liquids, about 5min.

3. Add onions and broth. Nestle roast in and add beef broth. Bring to a simmer, cover and transfer to oven for 2 1/2 hours. Remove lid and carefully flip roast. Cook for another 30min.

4. Remove roast. Loosely cover with foil. Remove a cup and a half of liquid and veggies. Puree until smooth and mix back in with remaining veggies.
