Roast Lemon Chicken Preparation
Preheat the oven to 325 F. Clean the chicken and remove the giblets. Cut the lemon into 8 pieces. Slice fresh jalapeño thinly, and keep seeds. Stuff the chicken with the lemon, thyme, jalapeño slices/seeds and crushed garlic, ensuing the ingredients are mixed inside chicken. Place chicken into a roasting dish and generously season it with lemon pepper. Tie the feet with cooking twine. Place the chicken into oven and baste with it's own juices every half hour. Cook for 2 1/2 hours, ensuring the internal temp is at 190F before removing. Carve it up and enjoy!
