A delicious easy to make roast chicken with a hint of lemon, spicy jalapeños and garlic

"This was wonderful! I put mine in the slowcooker on low for 6 hours and it was perfect. The skin wasn't crispy, but the meat was super moist and fell right off the bone when it was time to serve it. The Jalapenos, lemon and garlic really gave it a good flavor. I will make this again!" - melissabeckley1

Servings
Original recipe makes 8 Servings
1 wholeroasting chicken; ~3lbs, giblets removed, cleaned
1 lemon; Cut into 8 pieces
5 cloves of garlic; crushed
2 sprigsfresh thyme
1 jalapeño; fresh, cut thin slices
Lemon pepper seasoning

Roast Lemon Chicken Preparation

Preheat the oven to 325 F. Clean the chicken and remove the giblets. Cut the lemon into 8 pieces. Slice fresh jalapeño thinly, and keep seeds. Stuff the chicken with the lemon, thyme, jalapeño slices/seeds and crushed garlic, ensuing the ingredients are mixed inside chicken. Place chicken into a roasting dish and generously season it with lemon pepper. Tie the feet with cooking twine. Place the chicken into oven and baste with it's own juices every half hour. Cook for 2 1/2 hours, ensuring the internal temp is at 190F before removing. Carve it up and enjoy!

Notes

ensure the chicken is thawed before cooking.

Being a TOTAL beginner as far as cooking goes, I found this to be a nice simple, and good recipe. Only reason I didn't go with a 5 star is because (and again, I am a beginner) 1. I didn't know to place the bird in breast side up 2. Cover or no cover? I realized no cover about 2.5 hours in. 3. Add cooking time and temp when doing more than one bird...ok, how much?? Other than those basic things, it turned out good (about 1.5 hours later) and the family liked it. I will try again with the new knowledge and re-rate then.

    Happy cooking!!!
