Add oil and butter to a 10 inch frying pan, over medium heat. After butter is melted add frozen potatoes O'brien to the pan (for quicker cooking, you can thaw the potatoes in the microwave before adding to the pan). Cook until they are fork tender and starting to turn golden brown. Add scrambled eggs to the pan and reduce heat so they don't cook too quickly. If you can smell your eggs cooking, the temperature is too high. As the eggs begin to cook add salt and pepper to taste.
To serve, place egg mixture inside warmed tortillas; add your favorite jarred or homemade salsa and enjoy. If you do not like tortillas or they are not readily available in your area, mixture is just as yummy served with buttered toast.
For an alternative, you can also brown some breakfast sausage with the potatoes before adding the eggs.
Transfer the mixture from the pan to a serving bowl once it is done cooking so the eggs don't over cook or get brown.
