Wonderfully delicious shredded beef .. much like the Cuban Ropa Vieja, Carne Mechada is mostly served with Arepas and just such a delicious treat ... breakfast, lunch or dinner! There are some variations an many argue a few ingredients, this is the version at OUR home and it's a winner every time.
Place the skirt steak in a large pot and cover with water, add a half onion. Simmer until fully cooked for about 1 - 1/2 hours. You may cook in a pressure cooker, if you prefer.
Once cooked remove the steak from the broth and let cool. Reserve the broth.
Once cooled shred the beef with your hands or using two forks.
In a separate saucepan saute the sliced onion, the peppers until soft and translucent. Add the garlic, mix. Add the tomatoes.
Continue to cook for an additional 30 - 45 minutes, adding broth to the degree desired.
Serve with arepas or white rice.
If I am serving the Carne Mechada with rice, I do a saucier Carne Mechada, when filling arepas I use less broth so the arepas are easier to fill.
