Ingredients
Double-Bean Lunch Burritos Preparation
In a medium bowl, stir together beans, chilies, and cumin.
Arrange lettuce over tortillas. Spoon about 1/2 cup bean mixture near one edge of each tortilla. Top with salsa if desired. Roll tortilla around filling.
Serve immediately for a refreshing cold lunch.
Or, if you want to serve these warm, place one or more burritos on a microwave-safe plate. Cook, uncovered, on 100% power (high) for 35 to 40 seconds for one burrito, 1 to 1 1/4 minutes for two, 1 1/2 to 2 minutes for three, or 2 to 2 1/2 minutes for four burritos.
Notes
Canned green chili peppers are mild compared with other chili peppers, such as jalapenos or serranos. To save time in the kitchen, buy the green chili peppers that are already chopped.
