Original recipe makes 4 Servings
4 boneless chicken breasts
1/2 teaspoonsalt
1/4 teaspoonpepper
2 tablespoonsgarlic; minced
1 1/2 cupschicken broth
1/2 cupSun-dried tomatoes; not oil packed, slivered
1/2 teaspoonoregano; dried
2 cupsArtichoke hearts; canned, quartered, drained
2 tablespoonsParsley; fresh, chopped

Chicken with Artichokes and Sundried Tomatoes Preparation

Sprinkle chicken with salt and pepper. Heat oil in large nonstick skillet over medium-high heat until hot. Cook chicken 8-10 minutes or until done. Cover and set aside.

Add garlic to skillet. Cook and stir over medium heat 30 seconds or until fragrant. Add broth, tomatoes and oregano. Simmer 3 minutes or until tomatoes are softened and broth is reduced by half. Stir in artichokes. Cook 30 seconds.

Spoon vegtable mixture over chicken and sprinkle with parsley.
