| 4 boneless chicken breasts |
| 1/2 teaspoonsalt |
| 1/4 teaspoonpepper |
| 2 tablespoonsgarlic; minced |
| 1 1/2 cupschicken broth |
| 1/2 cupSun-dried tomatoes; not oil packed, slivered |
| 1/2 teaspoonoregano; dried |
| 2 cupsArtichoke hearts; canned, quartered, drained |
| 2 tablespoonsParsley; fresh, chopped |
Chicken with Artichokes and Sundried Tomatoes Preparation
Sprinkle chicken with salt and pepper. Heat oil in large nonstick skillet over medium-high heat until hot. Cook chicken 8-10 minutes or until done. Cover and set aside.
Add garlic to skillet. Cook and stir over medium heat 30 seconds or until fragrant. Add broth, tomatoes and oregano. Simmer 3 minutes or until tomatoes are softened and broth is reduced by half. Stir in artichokes. Cook 30 seconds.
Spoon vegtable mixture over chicken and sprinkle with parsley.
