Pan Fried Tilapia with Herbed Yogurt Sauce

You can use other delicate white fish in this recipe (like pickerel). Serve with vegetables. It's fast and healthy.

Ingredients

| 1/4 cupYogurt - thick Balkan style, plain |
| 1/4 cupChopped cilantro; can substitute fresh parsley |
| 2 eachGreen onions; chopped |
| 2 teaspoonsLime zest |
| 2 teaspoonsLime Juice |
| -- FISH -- |
| 4 piecesTilapia fillets; 4 oz each |
| 1/2 teaspoonSalt; optional |
| 1/2 teaspoonPepper; fresh ground |
| 1/2 cupAll purpose flour |
| 2 tablespoonsOlive Oil |
Pan Fried Tilapia with Herbed Yogurt Sauce Preparation
If tilapia is frozen, defrost in dridge overnight.
In small bowl, combine yogurt, cilantro (or parsley), green onions, lime zest and lime juice. Set aside.
Sprinkle both sides of tilapia with salt and pepper. Coat in flour. In large skillet, heat olive oil and butter over medium-heat heat. Fry fish, turning once until golden ad fish flakes easily with fork (about 2 minutes per side, 4 minutes total).
Serve with yogurt sauce.
