| 1 1/2 tablespoonsApple cider vinegar |
| 1 teaspoonWalnut oil; Canola can be substituted |
| 1/2 teaspoonsSalt |
| 2 cupsSavoy, or Napa Cabbage; shredded |
| 2 cupsJicama; raw, peeled, thinly sliced |
| 2 mediumGranny Smith apples; raw, peeled, coarsely grated |
| 2 mediumShallots; raw, minced |
| 1/2 cupDried cranberries |
| 1/4 cupWalnuts; chopped (pecans can be substituted) |
| Black pepper; to taste |
Apple Jicama Slaw Preparation
1. In a large bowl, whisk together honey, vinegar, oil and salt.
2. Add cabbage, jicama, apples, shallots, cranberries and walnuts;
season to taste with pepper. Yields about 1 packed cup per serving.
Notes
Let chill in the fridge for 30 minutes before serving to allow ingredients to soak in honey/vinegar mixture.
