|1 1/2 tablespoonsApple cider vinegar|
|1 teaspoonWalnut oil; Canola can be substituted|
|2 cupsSavoy, or Napa Cabbage; shredded|
|2 cupsJicama; raw, peeled, thinly sliced|
|2 mediumGranny Smith apples; raw, peeled, coarsely grated|
|2 mediumShallots; raw, minced|
|1/2 cupDried cranberries|
|1/4 cupWalnuts; chopped (pecans can be substituted)|
|Black pepper; to taste|
Apple Jicama Slaw Preparation
1. In a large bowl, whisk together honey, vinegar, oil and salt.
2. Add cabbage, jicama, apples, shallots, cranberries and walnuts;
season to taste with pepper. Yields about 1 packed cup per serving.
Let chill in the fridge for 30 minutes before serving to allow ingredients to soak in honey/vinegar mixture.
