Original recipe makes 6 Servings
2 tablespoonsHoney
1 1/2 tablespoonsApple cider vinegar
1 teaspoonWalnut oil; Canola can be substituted
1/2 teaspoonsSalt
2 cupsSavoy, or Napa Cabbage; shredded
2 cupsJicama; raw, peeled, thinly sliced
2 mediumGranny Smith apples; raw, peeled, coarsely grated
2 mediumShallots; raw, minced
1/2 cupDried cranberries
1/4 cupWalnuts; chopped (pecans can be substituted)
Black pepper; to taste

Apple Jicama Slaw Preparation

1. In a large bowl, whisk together honey, vinegar, oil and salt.

2. Add cabbage, jicama, apples, shallots, cranberries and walnuts;

season to taste with pepper. Yields about 1 packed cup per serving.

Notes

Let chill in the fridge for 30 minutes before serving to allow ingredients to soak in honey/vinegar mixture.
