Delicious side dish! Healthier than traditional mac and cheese but just as tasty!

Original recipe makes 6 Servings
1 Zucchini; large
1 cupmild Cheddar cheese; grated
1 cupsharp Cheddar cheese; grated
3 tablespoonsButter
1 tablespoongarlic; minced
1 Jalapeno pepper; finely chopped
Salt & pepper; to taste
1 tablespoononion flakes

Zucchini and Cheese Preparation

Melt butter in a large frying pan. Grate zucchini into pan and cook at a medium temperature until it is soft and mushy. Stirring occasionally.

Add the cheese and stir until melted.

Add the jalapeno, garlic, onion flakes and salt and pepper. Cook for about 5 more minutes, stirring often to keep the cheese from sticking to the bottom.

Notes

We often experiment with different kinds of cheeses (pepper jack, mozzarella, etc). You can use more or less cheese to suit your taste and also add many different toppings. Sometimes we even add sausage!

Very quick and easy. Next time I will use half the amount of butter, probably around 1 1/2 tbsp instead.
