Peel & de vein shrimp. Set aside
Cook bacon in large dutch oven until crisp; remove bacon, reserve drippings in pan. Crumble bacon & set aside.
Cook onion and next 5 ingredients in drippings over medium-high heat 3 minutes, stirring often. Stir in tomatoes and next 4 ingredients. Bring to a boil; cover, reduce heat and simmer 40 minutes.
Add shrimp, cook 5 minutes or until done.
Spoon over rice. Sprinkle with bacon if desired.
