| 1 egg yolk |
| 2 clovesgarlic |
| 1/3 cupextra-virgin olive oil |
| 1/2 cupParmesan cheese; grated |
| 2 teaspoonsDijon mustard |
| 1 teaspoonlemon juice |
| 1 teaspoonWorcestershire sauce |
| 1/4 teaspoonsalt |
| 1/4 teaspoonpepper; freshly ground |
| anchovy paste |
Caesar Salad Dressing Preparation
Coddle egg for 1 minute, and then separate the yolk from the rest of the egg. Rub garlic into sides of wooden salad bowl. In bottom of bowl whisk together all ingredients except for bacon, croutons, and Romaine. Place lettuce in bowl on top of dressing, and toss. Top with bacon broken into 1 inch pieces, and croutons.
