1. Preheat oven to 375 degrees Fahrenheit. Line a large baking sheet with parchment paper.
2. Combine all ingredients in a very large (4 L) mixing bowl. With clean bare hands mix everything together very well. You should be able to shape the mixture into balls and then press them into a burger shape on a cookie sheet. If your mixture is too dry add another egg white. If it is too wet, add some more cracker crumbs.
3. Place completed patties on the prepared baking sheet. You may need more than one sheet. When your baking sheet is full place it in the oven and bake for about 15 minutes, and then flip and bake 5 more minutes. Patties should be golden brown on top.
4. Serve with a salsa or salad.
