Suggest a better descriptionIn large skillet over medium high heat, melt 1 tbs. butter. Season chicken on both sides with salt and pepper, then add half to skillet. Cook for 3 minutes per side, then transfer to a plate. Add remaining butter and remaining chicken and repeat. Transfer second batch to plate and cover with foil and set aside.
Return skillet to heat and add onion. Saute 4 minutes, then add cinnamon, curry powder and paprika. Saute 30 seconds, then add the apples. Toss well to coat apples with seasonings, then cover pan, reduce heat to low and cook for 5 minutes, or until the apples are tender, but not mushy.
Uncover pan and stir in vinegar. In a small glass mix water and cornstarch, then add to skillet. Stir, then bring to a simmer. Return chicken to skillet, cover with the saquce, then cover and cook 6 to 8 minutes or until sauce has thickened and the chicken is fully cooked.
Serve chicken with the apple sauce spooned over it.
