Heat oven to 375 1. Combine the first 5 ingrediants in a small bowl 2. In a large mixing bowl add Butter and Sugar and mix until creamy 3. Add the pumpkin, eggs, and vanilla to the butter and sugar bowl and mix 4. Add the flour mixture to the wet bowl. 5. Fold in the chips Spoon onto cookie sheets and bake 15 - 20 min. These cookies will not brown. Don't over cook or they will turn out dry. I get about 3 dozen out of this recipe.
When dropping the cookies on the sheet, the size that is dropped will be the size of the cookie-----they don't spread. Store in a tight container and the will stay extra moist!!!!! ENJOY!!

PatInMontana 1 year agoIf you don't care for the chocolate chips try making this cookie without them and frosting them with a cream cheese frosting. My family loves raisins and date, so we have made these cookies using a combo of both fruit and pecans.
