Meatloaf Minis
Mini meatloaves - a hit with my husband and son. I make a vegetarian version for myself by mashing thawed Boca patties and using the same ingredients scaled down for a smaller batch.

| 1 lbsground beef |
| 1 cupsCrispix cereal; crushed (not powdered) |
| 1/2 cupsketchup |
| 4 TBbrown sugar |
| 3 TBWorcestershire sauce |
| 1 egg |
| 1 tspseasoned salt |
| 1 tspPepper |
| 1 tspground cumin |
| 1 tspgarlic powder |
Meatloaf Minis Preparation
Preheat oven to 350.
Mix together and roll into balls and place in cupcake pan
Bake for about 20min (or until done), brush ketchup on top and cook another 5 minutes
Notes
My family loves these; and I always make a veggie version for myself by warming up 2 boca patties for a minute, then mashing them with the same ingredients (quartered), makes 4. For more veggie servings, use 4 boca patties and 1/2 the ingredients listed.
Great served with rice or mashed potatoes, green beans and a fresh green salad.
