Chicken Bundles

"Both my husbanda and son (4) loved this - we will make this again soon! This is another recipe that is easy to make for a 'mixed crowd' of meat and non-meat eaters -- I sauted some mushrooms and used that in place of the chicken for a delicious vegetarian meal. Since the chicken and/or mushroom bundles are wrapped in the dough, they can be cooked side by side without the meat touching the veggie ones, so I cooked both versions in one dish. | 1 cancream of mushroom soup |
| 3/4 cupmilk |
| 1 cupsshredded monterey jack cheese |
| 10 oz.canned chicken |
| 1 cancrescent rolls |
| 1/4 cupswhite cooking wine |
| 1 cupsbaby bella mushrooms; chopped |
| bell peppers or other veggies (asparagus); optional |
| poultry or other seasoning; optional |
| dried parsley; optional |
Chicken Bundles Preparation
Preheat oven to 375. Spay bottom of a 9" square baking dish with non-stick cooking spray.
In sauce pan, combine soup, milk, wine and 1/2 cup cheese. Heat until cheese melts. Pour half of this sauce in the bottom of the baking dish.
Saute the mushrooms with a splash of wine and butter, salt and pepper.
Combine chicken and mushrooms and 1/2 cup cheese (sprinkle some seasoning if you'd like).
(If you're also making some veggie only, separate some of the mushrooms before adding to the chicken).
Separate dough into 8 triangles, short side of triangle towards you, point at top, straight side on the left.
Place 1/8 chicken mixture at the bottom of each triangle. Fold right point of triangle on mixture and roll up to create bundle.
Arrange bundles on top of sauce in baking dish.
Bake for 20 minutes, cover with remaining sauce and sprinkle with dried parsley and bake for another 20 minutes.
Notes
- Great served with rice and green peas!
- Other veggies can be sauted and mixed in -- onions, peppers, asparagus, etc.
- These bundles are almost like mini pot pies, so the recipe could also be tweaked to be more pot-pie-ish (skip the wine, replace with more milk, use corn-green beans-carrots mixture).
