Suggest a better descriptionRoll out a sheet of dough and trim the edges. Cut the dough into rectangles and brush them with egg wash.When the rectangles come out of the oven, cut them in half crosswise.
Line a sheet pan with parchment paper. Roll the dough into a 6 1/2 by 8 1/2-inch sheet, 1/8 to 1/4 inch thick. Transfer the dough to the prepared sheet pan. Preheat the oven to 425°F. Freeze the dough for 5 minutes, or until firm but not hard. Trim a 1/4-inch strip off all 4 sides. Cut the dough into eight 1 1/2 by 4-inch rectangles. Brush with the egg wash. Freeze for 15 minutes.
Bake for about 30 minutes. If the rectangles are golden brown before the time is up, turn down the oven to 300°F so the insides will finish cooking without the exterior becoming too brown.
Slice the rectangles in half horizontally and pull out any uncooked dough. When time to serve, place foods on the bottom half and cover with the top half.
Making Egg Wash for Pie Pastry:
Brushing pie pastry with an egg wash gives it an attractive golden sheen. A classic egg wash is made with an egg yolk, a whole egg, and salt, but you can play around with the ingredients, adding another yolk if you want a darker glaze, or another white if you want a lighter glaze. For convenience, a single whole egg beaten with 1/2 teaspoon salt will work well on most pastries.
