Original recipe makes 6 Servings
1 lbPears, cored, peeled, &
2 cWater, cold
1/2 lbPlums, pitted
1 lbApples, cored, peeled &
1/2 lbCheeries, pitted
1/2 cBread crumbs, soft & fresh
1/4 cRaspberry jam or preserves
1 cCranberry juice
1/2 cSugar
1/2 lbPeaches, peeled, pitted, &
1 tbFresh Lemon Juice
1 1/2 tbLemon Rind; grated
3/4 cWhite wine, sweet

Ukrainian Cold Fruit Soup Preparation

Put the water, cinnamon, lemon juice bread crumbs, and the lemon rind in large pot. Bring to a boil, then add the fruits, reduce heat, and simmer for 25 minutes. Puree this mixture in a blender then add the jam, wine, & cranberry juice. Mix well then refrigerate. Serve when well chilled. Note: Apple dumplings may be served in this soup.
