Original recipe makes 4 Servings
2 1/2 TBbutter
2 largeshallots
1/4 poundMushrooms; thin sliced
1/2 cupprosciutto
1/4 cupdry white wine
1 cuparborio
3 cupchicken stock
1/3 cupParmesan

Risotto with Mushrooms and Prosciutto Preparation

saute shallot in butter, add mushrooms and prosciutto, add wine reduce until au sec, add rice, coat, add stock 3x, finish with butter and parm.

Notes

Always use hot stock with risotto
