| 1 poundItalian sausage meat; (sweet or hot) |
| 1/2 cupWhite wine |
| 28 ozcanned italian tomatoes; crushed or diced |
| 2 teaspoonsfennel seeds |
| 1 teaspoonBlack pepper |
| 1 teaspoonoregano |
| 1 teaspoonGarlic powder |
| 1/2 teaspoonsalt |
| 1 quartLow sodium chicken broth |
| 2 tablespoonsbasil; chiffonade |
| 8 ozlasagna noodles; broken |
| 1 cricotta Cheese part skim |
Lasagna Soup Preparation
Bring large pot of water to a boil
Cook Lasagna noodles 10-12 min until tender
Drain and set aside
Meanwhile, sautee sausage in a 4-6 quart sauce pan or other pot with tight-fitting cover
cook until golden, breaking meat into small chunks as it cooks.
Add wine to deglaze pan.
grind spices together in spice grinder or mortar and pestle, sprinkle over sausage
Add tomatoes, bring to a boil, cover and simmer 20 minutes
Add stock, cheese, basil and stir well
Heat to boiling and add drained pasta to pot. Stir well and serve hot.
This soup tastes better if made ahead.
