"I loved the recipe. I like a little more spice in mine. I put in NM Red chili power and fresno peppers in and it realy gave it a kick. I made a double batch for the super bowl last year and i had a two cups left over. Thanks for chili I am kising my fingers."

2 mdOnions; chopped fine
1 8-oz cnTomatoes, canned
1 14-oz cnRed kidney beans, canned
1 lbVenison, ground
1 lbVenison; cut in chunks
1 tsOregano
salt and pepper; to taste
1 mdBell pepper; chopped
1 Bay leaf
1 tsGround cumin
1 tbChili powder; mild
2 tbolive oil
2 ClGarlic; crushed
2 sm cnChili peppers
1/4 tsCayenne pepper
4 tbTomato paste
2 tbDark brown sugar; to taste
1 cBeef stock

Uncle Bucks Venison Chili Preparation

Recipe by: Uncle Bucks Venison, Littleton, NH Heat olive oil in large saucepan. Add onions, garlic and bell peppers. Fr until soft. Brown all meat and add to above. Stir in tomatoes, tomato paste, seasonings and beef stock with a wooden spo Bring to a boil. Reduce Heat to low and cover. Add chili peppers. Simmer for two hours, stirring occasionally. Add kidney beans and simmer for another 30 minutes. Remove bay leaf and serve.

It was yummy. My husband took some to work to share with his redneck (avid hunter) buddies. They wanted the recipe. Thanks for sharing. However they jokingly said 'you don't put beans in Texas chili'. I'm a transplant Texas. How was I to know? Lol. Making another batch tonight. Thank you!
