Corn and avocado salsa Preparation
Place diced tomatoes, cabbage, spring onions and coriander in a large bowl.
Grate the zest of the lime into the mix.
Place olive oil, chilli and juice of the lime in a small jar and shake well to combine. Place in a bowl and use to coat diced avocado.
Microwave corn kernels for two minutes, drain and add to bowl. Toss with avocado and dressing.
Serve with pan fried fish or grilled chicken.
