Original recipe makes 8 Servings
1 cupquinoa; cooked
3 cupscooked black beans; (or 2 15oz cans, drained and rinsed)
2 largesweet potatoes; shredded
1 cupcheddar cheese; shredded
1 tablespoonground cumin
2 Eggs
1 cupsalsa
2 tablespoonscilantro; for garnish

Stepfanie's Quinoa-Black Bean Casserole Preparation

1. Preheat oven to 350. Prepare a 9 x 9 casserole dish with onstick cooking spray.

2. In a large bowl, mix together the quinoa, black beans, sweet potato, 1/2 cup of the cheese, cumin, salt, and pepper.

3. In a small bowl, mix together the eggs and the salsa. Pour the salsa mixture over the vegetables, then pour everything into the prepared casserole dish.

4. Sprinkle the remaining cheese over the top and bake, uncovered, for 30 minutes. Garnish with the cilantro.
