Beef Nacho Casserole

This is a simple casserole that can be thrown together and baked in about 35 minutes. Even with only a few ingredients, this casserole has a lot of flavor.

Original recipe makes 8 Servings
1 poundlean ground beef
2 cupsmedium salsa
1 canwhole kernel corn, drained; (10 oz.)
1 cupAll purpose flour
1 packettaco seasoning
2 cupscrushed tortilla chips
2 cupsshredded cheese, Mexican blend
3/4 cupSour Cream

Beef Nacho Casserole Preparation

Preheat the oven to 350 degrees F. Grease a 9 x 13 glass casserole pan.

In a large frying pan, cook ground beef until brown. Drain any grease from the pan.

Cook beef with taco seasoning, following package directions.

Add salsa, flour, sour cream, and corn to the beef in the frying pan. Stir to combine.

Put one half of the beef mixture into the bottom of the prepared casserole pan.

Put half of the tortilla chips and cheese on top.

Add the second half of the beef mixture and top with remaining chips and cheese.

Bake uncovered at 350 degrees F for 20 minutes, or until cheese is bubbly and casserole is heated throughout.

We added refried beans to the beef mixture, substituted chili powder for taco seasoning, and cut back the flour to a half cup. Good

It says right after cook the beef with seasoning to add the sour cream, corn, flour and other ingredients. Usually you add flour to thicken things so its going to be in the middle or end of recipe when you add the rest of the ingredients. But dish sounds pretty good might try it

This is a tasty but unusual dish, I have to admit I liked it better after it has set for a little while. The balance of flavors did work well, and it was a hit with my guests. While not my absolute favorite Tex-Mex dish it is one that will become an occasional staple in my entertaining plan.
