1/2 cupLow Fat Mayonnaise
2 tablespoonsSoy sauce
2 teaspoonsFresh ginger; finely grated
500 GramsChicken breast; Shredded
100 GramsSnow Peas; Ends tipped and cut in half on diagonal
1/2 MediumRed capsicum; de-seeded , finely chopped
1 MediumCarrot; peeled ,grated
4 Shallots; Cleaned, trimmed and sliced finely
80 GramsIceberg Lettuce; Shredded

Chinese Chicken Salad With Creamy Soy Dressing Preparation

Combine mayonnaise, soy sauce and ginger in a large bowl. Whisk until blended. Season to taste with salt and pepper and set aside.

In a separate bowl, combine chicken, snow peas, capsicum, carrots and shallots. Toss to combine, then add mayonnaise and toss to coat. Serve immediately in lettuce cups or cover and refrigerate for up to a day.
