This unusual recipe is actually quite tasty, and very easy to make.
Put salted water on to boil. Meanwhile, shell pistachios if necessary. While pasta is cooking, put all ingredients except spinach in a food processor and process until coarse. When pasta is almost done, add chopped spinach and cook until wilted. Reserve one cup of the pasta water and drain pasta. With processor running, add pasta water to sauce until mixture is creamy, or to taste. Add sauce to pasta/spinach mixture and toss. Season to taste.
Make sure spinach is chopped enough to toss with pasta, but not so finely it disappears into the dish. Sauce should be thin enough that it does not clump when tossing.
