"Awesome! I made quite a few changes, but this was a big Father's Day hit. First, I used Bob Evans spicy pork sausage instead of the one listed. Then I sauteed it until browned, and added fresh sliced mushrooms. Once the mushrooms were soft, I added the green onions to the saute pan. I then followed the layering directions, substituting finely shredded sharp cheddar for the mozzarella and parmesan cheeses. The sausage didn't taste spicy but it wasn't bland as some other reviews had mentioned. Definitely saute the meet first. There are a lot of possibilities with this one. "- LChickie

Slow Cooker Sausage Breakfast Casserole Preparation
Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of the slow cooker.
Top with hal of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onions. Repeat layering
Beat eggs, milk and pepper in a large bowl with a whisk until blended.
Pour over potato-sauge mixture
Cook on high for 3 - 4 hours or low for 6 - 8 hours.
