"Awesome! I made quite a few changes, but this was a big Father's Day hit. First, I used Bob Evans spicy pork sausage instead of the one listed. Then I sauteed it until browned, and added fresh sliced mushrooms. Once the mushrooms were soft, I added the green onions to the saute pan. I then followed the layering directions, substituting finely shredded sharp cheddar for the mozzarella and parmesan cheeses. The sausage didn't taste spicy but it wasn't bland as some other reviews had mentioned. Definitely saute the meet first. There are a lot of possibilities with this one. "

1 Package 26 OuncesFrozen shredded Hash Browns
1 PackageJimmy Dean Sausage
1 CupMozzarella
1/2 CupParmesan
1/2 CupSun Dried tomatoes
6 Green onions
12 Eggs
1/2 CupMilk
1 TSPSalt
1/4 TSPPepper

Slow Cooker Sausage Breakfast Casserole Preparation

Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of the slow cooker.

Top with hal of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onions. Repeat layering

Beat eggs, milk and pepper in a large bowl with a whisk until blended.

Pour over potato-sauge mixture

Cook on high for 3 - 4 hours or low for 6 - 8 hours.

Good flavor. I used chicken sausage to cut some of the fat/calories. It came out too dry & burned slightly so next time I will cut down the cook time and/or use low setting for less time.

To give it some extra flavor i added pork choizo. After cooking the sausage i added about a half of a stick of choizo and let it cook down. Gave it wonderful flavor!

I changed around the ingredients in my version, different vegetables & cooked bacon instead of sausage. This was a wonderful foundation to work with -- very yummy! Thank you!

Please say you cooked the sausage and drained it before adding. That would most likely take out the flavor as one suggested. There are a lot of beginner cooks that do not know this. Other than not stating that in the directions, this is a wonderful casserole. Thanks for posting.

very good. i added some other spices to the egg/milk mixture too pick up the flavor...garlic powder, paprika and a little red pepper.

My picky eater loved this! Will make it again... Thinking of using roasted red peppers instead of the sun dried tomatoes. Leftovers were even better the next day!
