I made up this recipe and often skip the peas, then add alot of spinach to simmer on top!
It's important to get fresh spinach!
At least 24 - 48 hours in advance, place frozen chicken in a casserole dish and pour the entire jar of Italian dressing on top. Add the rice and basil. Mix until all ingredients are covered.
Cover and put in the refrigerator to marinate overnight or longer.
When ready to cook, preheat the oven to 350?F. Take the casserole dish out of the refrigerator and add the peas plus 1/2 cup water and stir. Top with croutons (it's ok for them to soak in), and bake for 1 hour. In the last 5min, top with the fresh spinach, cleaned and stems removed, and press it in to soak in the top bubbly layer. Let simmer 5min.
Remove and let sit 5min and serve.
