Southwest Quinoa Salad

|1 cupquinoa; cooked and cooled|
|1 Avocado; peeled, diced|
|1/2 cupBlack beans; rinsed|
|3/4 cupCorn kernels|
|1 1/2 cupsbell pepper; diced|
|1/2 jalapeno peppers; diced|
|1/2 habanero; minced|
|2 tomatoes; diced|
|1 Red onion; diced|
|1/2 cupCilantro; chopped|
|Chili Lime Vinaigrette|
|1/3 cupgrapeseed or canola oil|
|3 tbspLime Juice|
|2 clovesGarlic; minced|
|3/4 tspCayenne; ground|
|1/4 tspGround cumin|
Southwest Quinoa Salad Preparation
Rinse quinoa in cold water and drain. Place 1 cup of quinoa and 2 cups water in saucepan and bring to boil. Reduce to simmer, cover and cook for 10-15 minutes or until all water has been absorbed.
For vinaigrette - Place all vinaigrette ingredients in a jar and shake until combined or whisk in a bowl.
For salad - Put all salad ingredients into a large bowl. Drizzle with the vinaigrette and gently toss to combine.
