Quick and easy meat loaf! This recipe is easy to prep, and not fussy. This will become your "Go To" meat loaf when you need a great dish in a pinch.

My Manly Loaf Preparation
Preheat the oven to 350 degrees.
In a large bowl, combine the ground beef, stuffing mix (any brand) eggs (make sure you use two eggs), and milk.
I used a potato masher to combine well. I also didn't hurry, and that let the ingredients combine nicely, without making the loaf too dense.
Spray some non stick cooking spray into a 12 inch by 12 inch pyrex pan (yes, you can use metal if you want). Then gently place the meat mixture into pan.
After that, I drizzled my favorite BBQ Sauce (Sweet Baby Ray's, original) diagonally across the top. The stripes were thin and didn't cover the entire surface. Then, drizzle ketchup (or more BBQ Sauce along the other diagonal. So the topping will be cross hatched, and will expand to cover just about the entire surface!
The baking procedure is where the magic happens. Bake for 30 minutes. Then, with the pan still in the oven, turn the oven off. Let stand for 20 to 30 minutes. This allows for the meatloaf to rest, and cool down a bit, but keep all those tasty juices inside! And remember, even though you've let it cool in the oven, is still quite hot to the touch!
Serve with whatever side dishes you wish!
Notes
Make sure you use ground beef that has no more than 10% fat! Otherwise the meatloaf will be greasy, and also might need to be drained off, which pulls the juiciness right out of it.
Do NOT skimp on the eggs, nor the milk! The meatloaf will absorb these, and be light and fluffy!
And DO cook exactly as stated! Letting it stand in the oven, after you turn the oven off, allows it to finish off nicely!
