| 2 cupsall-purpose flour |
| 3/4 teaspoonBaking soda |
| 1/2 teaspoonSalt |
| 1 cupGranulated sugar |
| 1/4 cupButter; softened |
| 2 largeEgg |
| 3 Bananas; mashed |
| 1/4 cupYogurt; plain |
| 3 tablespoonRum; dark |
| 1/2 teaspoonVanilla |
| 1/2 cupFlaked coconut |
| 1/2 cupPecan; chopped |
| Cooking spray |
| 1 tablespoonFlaked coconut |
| 1/2 cupPowdered sugar |
| 1 1/2 tablespoonFresh Key Lime Juice |
Coconut Banana Bread W/Key Lime Glaze Preparation
Preheat oven to 350 .
Combine flour,soda,and salt in meduim bowl. Mix and set aside.
Place sugar and butter in mixing bowl.;mix for about a minute. Gradually add eggs one at a time..
Add banana's,rum, and vanilla. Beat until blended. Add flour mixture, beat at low speed until moist. Stir in 1/2 cup coconut and pecans
Coat 9 x 5 loaf pan with cooking spray .Pour batter into pan and sprinkle 1 tbsp coconut on top.
Bake at 350 degrees for 1 hour. Check with tester. Usually takes 1:10 to 1:15 minutes.
Cool on wire rack for 10 minutes. Remove from pan..
Mix Powdered sugar and juice and drizzle over slightly warm bread.
Continue to cool wire rack
