1) Preheat oven to 350°.
2) Combine wet ingredients first, then gradually add flour one cup at a time, until batter begins to resemble dough. Add more flour if dough is very sticky, use less if batter is too stiff. Knead in chocolate chips last.
3) Divide dough into thirds. Shape each third into flat loaves and place on an ungreased cookie sheet. Bake for 35 minutes in a 350° oven or until golden brown.
4) Remove from oven, make slices in the loaves 1/4" - 3/8" apart. Turn cookie slices cut-side down and sprinkle with sugar and cinnamon mixture. Bake for an additional 15 minutes at 350° until cookies are toasted. Enjoy!
