Smoked Cajun Chili Preparation
Smoke beef and sausage for 1 hour (can be skipped if you do not have a smoker). Mix seasonings together in a medium sized bowl. Add vegetable oil into a large pot. Saute celery, unions, and garlic on medium heat for 5 minutes. Add chopped ground beef, diced sausage, and seasonings. Saute for 10 minutes or until ground beef is browned. Add crushed tomatoes, beef stock, honey, and bring to a boil for 15 minutes. Add diced tomatoes and simmer on low heat for 1 hour.
Notes
Do not start until after you have smoked the meat. Be careful not to burn the garlic. Beans could be replaced by rice.
