Slow Cooker Jambalaya
Sometimes I use this recipe to clean veggies out of the fridge. I have put different squashes, okra, and even red potatoes in this. |2 poundsChicken Thighs; boned and skinned|
|1 poundAndouille sausage; or smoked|
|3/4 poundShrimp large; peeled and deveined|
|1 largebell pepper; chopped|
|3 stalksCelery chopped|
|1 cupFrozen sliced okra|
|3 clovesGarlic; chopped|
|1 mediumZucchini; chopped|
|2 canstomato diced|
|1 canChicken broth|
|1 tablespoonCajun Spice|
|4 dashhot sauce; to taste|
|1 1/2 cupsConverted Rice; See notes|
Slow Cooker Jambalaya Preparation
Combine everthing except shrimp and rice in slow cooker. Cook on low for 5-6 hours. Add shrimp and rice. Turn to high and cook for 20-30 minutes.
The recipe calls for converted rice. Using regular rice does not work. Most of the time I make my favorite rice seperately and add it at the end.
