A yummy, easy and cheesy breakfast souffle that my mom used to make on holiday mornings! We call it Marylu's Breakfast Souffle!
Butter six slices of sourdough bread that are a bit on the stale side. Cut or tear slices into smaller bite size pieces and place them into a buttered round casserole or souffle dish.
Sprinkle in one and a quarter cups of shredded sharp cheddar cheese.
Mix bread and cheese together being careful not to smash down.
Beat six eggs together with two cups of milk along with a few dashes of Worcestershire and Tabasco sauces to taste. Add one tablespoon of finely chopped chives and mix well.
Pour egg mixture over bread and cheese.
Sprinkle the remaining quarter cup of cheese on top of souffle.
Refrigerate for at least three hours so bread has time to absorb egg mixture. It is best to make the evening before and refrigerate overnight.
Preheat oven to 350 degrees. If you'd like you can sprinkle more cheese on top as desired before placing in oven uncovered.
Cook one hour or until cheese on top is bubbly and bread is golden. Remove from oven and let sit for five to ten minutes before serving. Souffle will be hot!
My mom always served this souffle with chicken apple sausage, fresh fruit salad and popovers!
