My great grandmother's recipe for baked chicken. Simple and always a hit.
Preheat oven to 425
Line a large, shallow pan with foil.
Wash chicken and pat dry
Rub chicken generously with butter or olive oil.
Arrange chicken skin side up in pan
Sprinkle chicken with salt, pepper and lemon juice.
Bake uncovered at 425 (without turning) until tender and golden brown - 45 to 60 minutes.
The juice makes a good gravy for mashed potatoes. This chicken is always a hit. Note the measurements above are approximate - this is a recipe you just put together.
I have a copy of the recipe card my great grandmotheR gave my mom - she made a note that she also made steaks this way.
