Very rich, but good.
1. Preheat oven to 450 degrees. Coat an 8-inch square pan with cooking spray and set aside.
2. Melt butter in medium saucepan over medium-high heat. Add onion and saute for 5 minutes or until tender. (Do not brown onion). Remove pan from heat. Stir in cornbread mix, 1/2 cup cheese,
sour cream, milk, egg and salt.
3. Pour mixture into prepared pan. Bake for 25 minutes. Sprinkle top evenly with remaing 1/2 cup cheese. Bake 5 minutes more or until a wooden tooth pick inserted into center comes out clean.
Cool slight before cutting into squares
