Crispy and savory, fried stuffed olives are a wonderful amuse-bouche. You'll find your self repeatedly "having just one more".
Roll a sliver of garlic, strip of cheese, and half a cilantro leaf togther and stuff into an olive. Repeat for the rest.
Roll each olive in egg wash, then flour, egg wash again, and then panko bread crumbs. (This can be done up to a day in advance but refrigerate.)
Preheat deep fryer to 350 degrees F. If cooking stove top be careful, use 1" of oil and make sure oil is at 350 degrees F when you start.
Fry olives until golden brown, about 30 seconds.
You could alter the stuffing with infinite varieties. A sliver of pickled jalapeno is good. Roasted red pepper is sweeter.
