GLAZE: Mix the sugar and cornstarch together. Mix the orange juice, water and lemon juice together- make sure the liquids are cold. Then add the sugar/cornstarch mixture and stir to dissolve. Add a dash of salt. Bring the mixture to a boil in a saucepan, stirring constantly, boil 1 minute. Reduce heat and continue to stir until thick. Cool the mixture in the fridge.
CRUST: Press cookie dough into a 12-inch pizza pan and bake at 350 degrees for 10-15 minutes (until golden brown). Works well to cut into 1-inch slices and place on cookie sheet- pressing the dough together. When it cooks the cookies will run together and brown.
FILLING: Mix cream cheese, Cool Whip, vanilla and sugar; blend well. Spread onto thoroughly cooled cookie crust.
Arrange fruit on the pizza (on top of the cream cheese filling). Be creative- arrange fruit in any way you wish. Do not use frozen fruits, canned mandarin oranges work well (drained thoroughly) but fresh fruit is the best.
Spoon the glaze over the pizza to seal fruit. Refrigerate.
