Cranberry-Horseradish Relish
Original recipe makes
| 12 ounces cranberries |
| 2 pears, ripe; peeled and cut in pieces |
| 1/2 cupbrown sugar; plus 2 T., firmly packed |
| 6 tablespoonshorseradish root; peeled and grated |
| 2 tablespoonsraspberry vinegar |
Cranberry-Horseradish Relish Preparation
In food processor, coarsely chop cranberries and pears with brown sugar. Transfer mixture to a small bowl, then stir in horseradish to taste, the vinegar, and salt and pepper to taste. Relish keeps in refrigerator for two weeks.
