Original recipe makes 4 Servings
1 bunchasparagus
1 largeyellow onion; halved & sliced
2 tbspbutter
4 clovesgarlic; minced
1 tbspsugar
4 tbspolive oil
salt & pepper; to taste

asparagus madam Preparation

in a large skillet, melt the butter on medium heat. toss in the onion, stir to coat evenly. cover and cook for 10 minutes. sprinkle in the sugar and stir well. cover and continue to cook. continue to stir frequently on medium heat for 45 minutes or until onions are golden and gooey. add in garlic and asparagus, stir well, cover and cook for 5-8 minutes.

in a small skillet on medium heat, add 1 tbsp of olive oil and coat pan. crack egg into pan, sprinkle with salt and pepper. cover and cook for 5 minutes. repeat for each egg.

plate asparagus/onion mixture, and slide 1 fried egg on each asparagus pile.
