Delicious sweet potato dish that my grandmother used to make. Sweet potato souffle with a crunchy pecan topping. Perfect for the holidays!
Start with about two large sweet potatoes. Peel and dice them and place them in a saucepan and fill with water. Boil for about 20 minutes or until the pieces are tender. Drain out the water and mash. Measure out three cups and discard or save the rest for later.
Mix the three cups of mashed sweet potatoes with the cup of sugar, eggs, salt, butter, milk and vanilla extract. Pour into a greased baking dish.
To prepare the topping, mix together the brown sugar, flour, chopped pecans and 1/3 cup of melted butter.
Spoon the prepared topping over the potato mixture.
Bake at 350 degrees F for 35 minutes.
