Pear Pancakes
Original recipe makes 4 Servings
| 3 Ripe Anjou or Bartlett Pears |
| 1/2 cupsApple Cider |
| 1/4 tspPumpkin pie spice |
| 3/4 cupsQuick cooking oats |
| 3/4 cupsAll purpose flour |
| 1/2 cupswhole wheat flour |
| 1 Tbspsugar |
| 1 tspbaking powder |
| 1/2 tspbaking soda |
| 1/4 tspsalt |
| 1-3/4 cupsbuttermilk |
| 2 Eggs; beaten |
| 2 tbspoil |
Pear Pancakes Preparation
1. In 4-quart saucepan, heat pears, cider and spice to boiling on medium-high. Reduce heat; simmer 30 minutes or until very tender, stirring.
2. In bowl, whisk oats, flours, sugar, baking powder, baking soda, and salt. Whisk in buttermilk, eggs and oil.
3. Brush 12-in nonstick skillet with oil. Cook. Serve with pear syrup.
