2 tsExtra-Virgin Olive Oil
1 tbFresh Lemon Juice
1/4 tsBlack Pepper; ground
1/4 cChopped fresh basil
1/4 tsSalt
2 tbFinely chopped flat-leaf
1 Garlic; minced
1/4 cOnion; finely chopped
1 lbDiced unpeeled plum tomato,
15 ozCannellini beans, (1 can)
1/8 tsCrushed red pepper

Tuscan Tomato-Bean Salad Preparation

Place plum tomato in a colander; sprinkle with salt, and let drain 1 hour. Combine lemon juice and next 4 ingredients in a large bowl, and stir well. Add tomato, basil, and remaining ingredients, and toss well. Yield: 4 servings (serving size: 1 cup).
