Tuscan Tomato-Bean Salad
Ingredients
Original recipe makes 4 Servings
| 2 tsExtra-Virgin Olive Oil |
| 1 tbFresh Lemon Juice |
| 1/4 tsBlack Pepper; ground |
| 1/4 cChopped fresh basil |
| 1/4 tsSalt |
| 2 tbFinely chopped flat-leaf |
| 1 Garlic; minced |
| 1/4 cOnion; finely chopped |
| 1 lbDiced unpeeled plum tomato, |
| 15 ozCannellini beans, (1 can) |
| 1/8 tsCrushed red pepper |
Tuscan Tomato-Bean Salad Preparation
Place plum tomato in a colander; sprinkle with salt, and let drain 1 hour. Combine lemon juice and next 4 ingredients in a large bowl, and stir well. Add tomato, basil, and remaining ingredients, and toss well. Yield: 4 servings (serving size: 1 cup).
