Original recipe makes 2 Servings
| 1/4 cupRice vinegar |
| 3 tablespoonsdark sesame oil |
| 3 tablespoonsmild or sweet Miso; (Yellow or White) |
| 2 Carrots; roughly chopped |
| 1 inchGinger; roughly chopped |
| to tasteSalt |
| to tastePepper |
Miso-Ginger Dressing Preparation
Put all ingredients except salt and pepper into a food processor and pulse a few times to mince carrots.
Then let machine run for a minute or so, until mixture is chunky-smooth. (If you want it smoother, let it run longer)
Taste and add salt and pepper to taste.
Best to chill a bit before putting over salad but not absolutely required.
