- Brown the onions slowly in olive oil
- Add ginger and garlic
- Add chicken until colored (2 min)
- Add coconut milk, curry paste, fish sauce, lime, lemon grass, sugar,
- simmer for a few minutes
- Add eggplant,
- simmer
- Add the other vegetables
- serve with sticky rice or jasmin rice
