this has been a family favorite for 20+ years. I give them out around the holidays (among other tasty goodies)"Bake at 375. I used leftover coffee to add moisture. I've never had a problem getting them out of the pan and they have never been crumbly. ALL my family request these often!! Banana Coffeecake Muffins Preparation
stir flour and other dry ingredients together set aside.
beat butter and sugar until mixed. Add coffee/bananas and continue mixing. Add egg and mix. stir in flour mixture gently. don't overmix. add choc chips.
Put in greased pans. Bake 25-30 min. in 350(F) oven
i usually add a little extra coffe as it makes it moister (a good thing).
