this has been a family favorite for 20+ years. I give them out around the holidays (among other tasty goodies)
"Bake at 375. I used leftover coffee to add moisture. I've never had a problem getting them out of the pan and they have never been crumbly. ALL my family request these often!! I think if you just add more cold coffee to them they will never be dry" - RobilinYield: 24 Servings Ready in 45 minutes

| 1 teaspoonbaking powder |
| 2 1/2 cupsspelt; or gluten free flour |
| 1/2 teaspoonbaking soda |
| 1 1/2 cupsmashed, ripe bananas; add to bananas |
| 1/2 cupcold coffee; add to bananas |
| 1 cupsoft butter; add to butter |
| 1 1/4 cupsugar; or honey, add to butter |
| 1 egg; add to butter/sugar |
| 1 cupmini chocolate chips |
Banana Coffeecake Muffins Preparation
stir flour and other dry ingredients together set aside.
beat butter and sugar until mixed. Add coffee/bananas and continue mixing. Add egg and mix. stir in flour mixture gently. don't overmix. add choc chips.
Put in greased pans. Bake 25-30 min. in 350(F) oven
Notes
i usually add a little extra coffe as it makes it moister (a good thing).
