An asopao is a kind of soupy gumbo. This is a delicious shrimp asopado from my childhood.
1. In a caldero over medium high heat, sauté onion in olive oil until translucent, about 7 minutes
2. Add recaito and sofrito, olives, capers, salt, pepper and sazon and sauté until flavors combine about 4 - 5 minutes
3. Add garlic and sauté until fragrant, about 1 minute
4. Add tomato sauce and let simmer for about 2 minutes
5. Add clam juice, broth and shrimp skins (wrap skins in cheese cloth bundle). Bring to a boil and lower temperature. Cover and simmer for about 20 minutes.
6. Remove shrimp skins. Raise heat to medium high and add rice and stir. Bring to a boil.
7. Add shrimp and cilantro, set heat to medium low, cover and cook until rice is tender and.
8. Taste and add salt if needed.
For a thicker asopao lower heat at the end and cook for longer. For "soupyer" asopao add broth/water a little at a time until your desired consistency is reached.
