To improve I'd want to experiment with more spices as this tended to be a little bland for my taste. My husband added tabasco sauce to his and liked it. Out four year old liked it. 1 sm headbroccoli; sliced
2 tbButter
BEAT TOGETHER WELL
TOPPING MIX TOGETHER
3 mdPotatoes; sliced long
Black pepper
2 cmilk
1 tbButter
3 cBreadcrumbs
2 1/2 cCheddar Cheese; grated
1 cMushrooms; sliced
1 sm headcauliflower; sliced
Salt
1 tbolive oil
1 mdOnion; chopped
1 Zucchini; sliced long
3 Eggs
1/4 cParmesan cheese
1 lgcarrot; Sliced

Baked Vegetables Au Gratin Preparation

Melt butter into oil, swirl to mix and add onions. Saute until light golden and add mushrooms. Cook another 2 minutes and remove from heat. Heat oven to 375F. Butter a large deep casserole dish. Wash vegetables (any combination of those mentioned or whatever you have on hand.) Slice all vegetables into thin slices, the length of each vegetable. Lay one layer of carrot and zucchini, sprinkle with half of the onions and mushrooms, one-third of the grated cheese, and salt and pepper, lay down a layer of broccoli and cauliflower, sprinkle with remaining onions and mushrooms, one-third of the grated cheese and salt and pepper. Lay down a layer of potatoes and sprinlde with salt and pepper. Dot with butter. Mix together milk and eggs and pour over mixture. Cover with foil and bake for 30 minutes. Uncover and bake for 15 minutes. Sprinkle with remaining one-third of the cheese, breadcrumbs and Parmesan mixture and bake another 15 minutes. Recipe by Mangia

Love this recipe! Will be making this a regular dish at our house! I used so many vegetables! This is great for all those veggies That need to be used up. I only put in about 1/2 cup breadcrumbs because that's all I had, but it still came out great!

Love it :-) Didn't add as much cheese but still tasted great. I also reduced the egg and milk to 1 egg in 1 cup milk. Great recipe!!
