Vanilla Meringues with Sour Cherry Centers Preparation
Beat egg whites until they turn foamy.
Wick in salt, cream of tarter and vanilla on medium speed until soft peeks form. About 1-2 minutes.
With machine on low, add sugar slowly.
Increase speed to high and continue to whip until very stiff glossy peaks form about 5 minutes
Preheat oven to 225 degrees.
Line cookie sheet with parchment paper.
Drop 12 heaping tbsp on to tray.
Lightly press cherry into center, then cover with batter, use fingers to seal.
Bake for 2 hoursturn off oven (don't open door) for an additional 20 minutes.
Serve within 24 hours.
